This method has an advantage: If we have that average product, we can always at that time decide to add some more products. i.e. Lets have the normal wooden cup first and when we have time to spare (somewhere around 2010 or so) we can expand on that list for things like the golden cup and what not

Thesis doesn't sound too bad. Maybe someone's masterwork :P
But just using 1 "medium" price would simplify things a bit, and leaving old / young / male /female out of the equation too.
Just 1 medium price for 1 medium specimen :)
I do think though that the price counts for a quantity. Especially for ores, minerals, grains and such: a price for 1 sack of grain, which contains enough grain to bake 50 breads.

I'll start on some foodstuffs, but i'd like to know how deep we're going to take this. Look at i.e. a cow. you pay a price for a healthy animal, but what about an ill animal? or a young / old animal? male /female? Do you have prized animals? (cow contests and the likes) :)
Not to mention that cows coming from a farm known to produce good milk get a better price than from a poorly producing farm

Not to mention that you want both the low end and the high end prices :)
And yes, you would want to know what everything costs from raw material to finished product. That way you get a "real" price, since every step in the chain adds value to it. So i.e. a sack of golden grain might cost 50 sans, and a baker can make 50 loafs of bread out of it, meaning that a loaf would cost 1 sans, plus something for the baker.

Okay, the realtime communication might pose some issues :) Maybe that could be done just by the people willing \ able.
An iRC / MSN session might be a better option, at least for people not too far away timezone-wise

And i have my own IRC client, no need for the Java version.

I would agree that if you want timezones, it would not cut a continent in half :)
This would mean that Sarvonia and Aerullin have the same time, akdor and nybelmar another and cyhalloi / yamalquain another as well.

If you make a base price, don't make it in 1 city, but determine for each "product" the lowest price (the price in a region where it's abundant), then extrapolate that to a high price (the price in a region where it can hardly be found)

My first impression would be that a ruffled fur and waterproof don't really mix. I would expect a very clean and smooth fur.

Do the ears have some safeguard as well to keep the water out?

If it's paws are webbed, does that mean it moves slower on land?
