I started this entry as my contribution for the link-contest, but midway I needed a rest and as it is with every work which you push not forward, it takes ages ;) When I saw, that seeker has started an overview about food in Caelereth, I thought he might want to use this collection for Santharia.

Therefore you will find only some notes and ideas when you come further down. Hopefully you will enjoy the beginning nevertheless, or is this listing only boring?

Hobbits and Food - the Perfect Match



Hobbits and Their Food - a Lucky Match (concurrence/concourse..? Coincidence?)





Overview:

No other race known in Sarvonia, maybe even in the whole of Caelereth, is as fond of food, drinks and eating as the Halflings. There exist of course sophisticated elven meals reflecting the cosmos and Caelereth in general, there are excellent dishes served at the table of the Santhros,  dwarven meals overwhelming any human palate, tiny Brownie delicatessens, but no other race or tribe has centered its daily life voluntarily around preparing and consuming food and draws so much pleasure out of it than the Hobbits.  The following article describes the main characteristics as well as some peculiarities and specialities of the single tribes, which are the

-  Helmondshire Hobbits, the tribe  living in the Northern part of the Silvermarshes, not too far away from the known „City of  Death“, Nyermersys, the capital of Nermeran and northeast of the Thaelon.
- Dogodan Shire Hobbits, residing in the Alianian Hills, south east of the Ancythrian Sea
- Elenveran Hobbits, south of New-Santhala at the Northern Elverground
- Halbanian Hobbits on Denilou

Each Hobbit tribe has its own characteristic what the choice, preparation and consuming of the food resources concerns. So the Hobbits in the Silvermarsches e.g. favour a tangible diet with a clear basic taste, a strong flavour and in general more simple food. That does not mean, that Silvermarsches receipts cannot out rival any of those you can find in Madame Sausage‘s cookbook. They prefer hot meals to cold ones, probably due to their Northern location. The Halflings of the Alianian Hills are specialists in seafood, which they prefer to meat; they have a lot of excellent meals which combine the local vegetables with fish and an occasional oysters. In general, they have probably the most refined kitchen of all Hobbit tribes. The Elenveran Hobbits, though they eat as plenty as the other tribes, like a somewhat lighter diet. They prefer wine to beer, use different, lighter oils, cold meals are more common than in the Northern shires. The information about the Halbian Hobbits are quite rare, but it is assumed, that their main diet does not vary much from that on the Sarvonian continent, fish and seafood might be a stable ingredient as they live on an island in the Adanian Sea.

THE FOOD

Though there are of course penchants (?), a Hobbits doesn‘t scorn anything, but is very keen on trying out new stuff and eats what many other people don‘t think can be eaten or can‘t be eaten together. On the other side there are traditions which may not be broken like special food in a certain order at festivities like the xxx when Dalireen is worshipped.

Vegetables, Fruits and Grains

Vegetables

As the general entry about hobbits already states, vegetables, fruit and grains are the main diet, preferred to meat. For the inexperienced eater this might sound a bit boring, but many greenery-avoider (concerning food) learned to like vegetables once they had the opportunity to taste a Hobbit casserole, e.g. the Carroot-Shallot-Brandypot like it is served in the Alenian Hills.  
Of course it will never be possible to collect all the vegetables which are consumed by Hobbits, but the most important shall be listed:

Ae'lons:
 All these fresh multi-layered vegetables like the  weeproots and her sisters the  onyons,  garlick, the Reeking Lily, ringroot, teargrass are essential in any kitchen, not only the Hobbit home. But unlike as in some human families the effects they have on the consumers digestions are not as feared as elsewhere.  

Carroots
 or Yellow Roots as they are called by the Elenveran Hobbits, are served nearly daily, raw or cooked. A well loved dessert is finely ground raw  carroot mixed with meldar apples cider, a little  juice of the false sun (if available, otherwise thinned vinegar has to do) and some foridite. No hobbit child can withstand such a treat.



Kail:
 This vegetable is mainly - and extensively - used by the Northern Hobbits in the Helmondshire due to its growing conditions.  Some Kailflower or Brockkaile are found in the Dogodanshire as well, in cool shady places in nearly every garden. Head cabbage can be cooked  as a sweet variety, but more often it is treated in a special way, so that it becomes „sour“. This is a method of conserving it, but not only this. Sourhead, as it is called now, is very healthy and prohibits illnesses like the  scurfy which are common in winter or at sea voyages, when fresh fruit apart from the lymmon is not available or too expensive.  But, „Sourhead“ is used as well as a name by the Southern Hobbit tribes for the Helmondshire halflings when they intend to tease their Northern brothers.

Neeps:
 Though a mostly Northern Sarvonian fruit, furneeps, Pa‘s Neep and redneep, all three are well loved and used by the Dogodan and Helmondshire Hobbits, to a lesser extend by the Elenveran Hobbits, for they grow not well in the sun-blessed Elverground.

Peasecods:
 Wherever a little place can be found between other vegetables, Bean-babies are grown and liked very much by all ages, though younger children sometimes dislike them - because bean-babies are often used to teach children how to count.

Pricklepeas
 are harvested only by the Helmondshire Hobbits, but are traded as finished products (Oyoosh, Oyame, Oya Nuts) to the Southern Hobbits.

Pompions :
They are  a well loved food with all Hobbit tribes, partly they are grown by the hobbits themselves, but when the weather conditions were not favourite, they are imported as well. The Elveran Hobbits get them from Antiragon, that little town north of the Sharadon which produces them commercially, the Dogodan hobbits get them from Yorick (a town east of the Almatrar forest near the Adanian Sea). However, the receipts for the most famous dishes are not of hobbit origin (something a hobbit not often admits), but ‚imported‘ from the ThergerimTaal. „Mezpuu“, the dwarven name for the water-gourd, is used by the hobbits as well, but denotes a special dish only: a small pompion, about a handspan in diameter, is stuffed with seasoned bread and baked in an oven. Most times wheat or bredden flour is used for the bread, not the dwarven borwul-bread stuffing.

Tuberroots:
Not much can be said about these fruits other than they are widely grown and eaten. The Northern hobbits sometimes experience difficulties with their wetly soil especially in rainy summers, the Elveran might have only smaller fruits in an arid summer, but generally they are eaten at least twice a week. Fine cookery choses the colour to match the meal, but everyday cooking takes what is available.

Fruits

Fruits are probably the most loved food in the Hobbit kitchen (and not only there). Vegetables are eaten more often and in bigger amounts, but the quantity of receipts for many uses: fruit jellies, -cakes, - casseroles, - bread and not to forget fruits wines and other alcoholic beverages is telling its own story. Most fruits can be eaten not only cooked, but raw and dried and are sweet, an advantage not only the children cherish. (Of course many vegetables can be eaten raw as well, but if one compares a raw tuber-root to an apple - what would the gently reader  choose?)

A hobbit will consume every fruit offered, here are listed those used widely, due to availability. For the readers convenience they are listed alphabetically.

Bell Fruit

Though this fruit grows in tropic areas only, the Elenveran hobbits have succeeded in raising single trees in the midst of their villages, giving them a distinct appearance compared with the Northern tribes.  Well watered and protected from frost as a sapling (from the Zeiphyrian forest) they survive the sometimes more arid climates of Elverground. To the annoyance of hobbit cooks from the North, the berries travel not well and so only jams and jellies are known up there.

Lyth-Bell

Entry


There is no hobbit fence which is not ornated with that plant. And there is no cooking competition where not hot disputes between the Helmondshire and the Elenveran cooks arise, which varieties are the better tasting ones, the red, more acid ones of the South or the bluish ones of the North. The Dogodan hobbits however only smile about their brethren, for they have the two varieties, specially grown in sunny or cooler and partly shady places.  And they of course claim, that only their sauce is the true Lýth’bél sauce, with both kinds of berries processed.

Though well loved by all hobbits because this fruit symbolizes Dalireen, it unfortunately only grows well in the mild climate of the Alianian Hills. That does not mean, that the Elenveran hobbits try not to protect it from heat and sun and the Helmondshire from rain and cold weather, but the harvest will always be bad compared to the Acorn-lands. So the fáberige is often traded - as jelly ( it is one of the more popular, if not the most popular, kind of jelly in Santharia) - or as delicious sweet wine, either colored a romantic purple or a delightful whitish-yellow, depending on the color of the skin.

Hearth-berries

Heartberries are only growing in the Alianian Hills, much to the chagrin of the other hobbits. It seems,that they cannot be dried, but when crushed a variety of drinks can be made. The Cavthan "Twilight's Hearth" is well known, as the liquor Firewine, but the Dogodan would be no hobbits, if they would not produce their own variety. Of course it excels the human drinks, just nobody knows!


Kell Buds

This time the Elenveran hobbits are blessed with a fruit, which is rarely found in Northern Santharia. Only they can have fresh buds in their salad, the others have to be content with „Kellian“, the powder won of the dried and ground buds which is mixed in fresh milch to obtain, when whipped, a sweet, frothy drink.



Loriv Berry

As the Loriv berries are fairly bland when on their own and mostly used to cut back on the main, eventually expensive ingredient*, they are not mentioned very often and culinary cooks deny ever having heard of them, not to speak of having used them.
*They are added to vegetable stews and hot-pots, they double in size when fresh and take on the flavour of the food that it is being cooked with. Great for cooking on a budget.

Meldarapple

The fruit for the Helmondshire hobbits! Though the tree can be found in the Alianian Hills as well, the „Sourheads“ claim, that these fruits have a salty taste to them and only those which grow in the Silvermarshes are the right stuff. They not only make jams, jellies or bake them in pies, pour honey on fresh peeled pieces, no, they add it to their sourhead (see above) which gives the vegetable an additional well loved flavour.


Redberries

The Redberry bush is very common, so are the fruits. They make a rather tart juice, suitable to season meat and some soups. Jam or jelly out of redberries tastes especially nice with steaks, chops and poultry.

Vinterberry

The vinterberry is rarely used in hobbit cooking, not even as snack-food, but the Elenveran halflings use it to flavour some of their vine. Each year a small expedition is sent to the Sharadon forest where they are harvested under the curious eyes of the Maeverhim.

Grains

Common and often used, not much is to say about the grain or the following product, the flour - apart that wonderful dishes are created with each type, be it the wheat, which grows in every shire well (though in the Silvermarshes generally more vegetables are eaten), the Golden Rain which thrives in some protected areas in the Alianian Hills and Bredden Grain, which is widely used in the Elverground.

Meat and Fish

As mentioned above, meat is not the center of hobbit cooking, but the the halflings do cherish it nevertheless. Often smaller amounts are cooked with the vegetables in a stew or fried in a pan over the open fire, but at certain occasions young pigs or a goose are roasted whole on a spit over an open fire. Especially the Helmond shire clan is very good in creating delicious sausages and meat pastries and it is not true, that there only are the leftovers in them which could not be used otherwise.  Which meat  -  or fish -  is eaten depends a bit on the location of the clan and each shire has of course its specialities. See list for more detail.

Meat:

When a hobbit hears „meat“, he thinks of course first of the most loved (in every respect) hobbit pig, the Hogling. Allow to quote the man who did an excellent research about this extraordinaire pig, Mannix:

“A party would not be complete without a finely roasted Hogling. It is a true compliment to all guests if such a pig were served whole after hours over a spit, due to the sheer amount of effort and time in preparing and cooking the succulent pig. Nearly every part of the pig can be eaten, by hobbits at least. Sausages, bacon, pork and ham are taken from the pig meat, and the skin can also be eaten after being fried. The feet of the pig, known as trotters, when cooked slowly for a long time, are also said to be a delectable treat.... When cooked correctly, the pig's head can be used to create a preserve known as pig cheese, and this is rather popular served with pork. And finally the offal is also often eaten.... After the hobbits are done, there is usually barely anything left of the pig.

So no wonder, that the common domestic pig is rarely or not at all found in the shires, though two other varieties are occasionally eaten. Not far from the Alienian Hills the grassland boar roams and the Elenveran hobbits have an occasional Rimmerins black-hog




Cattle is rarely held by hobbits, it is just too big for the smaller halflings. But as food lover they would not allow that something so tasty will escape their palatine experience and so they try to purchase it wherever possible, but most times they will only have available the jerky of the banek or the Rimmilch Cow. The Strata Milking Cow is out of their reach and from the special taste of  wison meat a hobbit cook can only dream.


Sheep and Goats are occasionally held as well, so the Elenveran hobbits heard the Dor‘iyn sheep, all shires know the [url=http://www.santharia.com/bestiary/goat_domestic.htm]common goat.  A few Sawis sheep are only held for their fleece, not for eating.

However, there is a little goat , the Dogodan Goat which is nearly as well loved as the Hogling. It can only be found in the Alianian Hills and is most often only used for draft and milch. 

Fish

The Bonehead is a very popular and easily worked food fish. It can be salted and dried and stored for long periods of time without spoiling. It can be eaten as dry tack, or more popularly, cooked in water and it becomes tender and fresh again. Return to the top

Cut into steaks and fillets the fish can be boned and salted quickly cooked by fire or by grilling and then peppered with herbs and spices for a popular dish to eat
The Clawfish are mainly used as food. To fishing cities it may be a common food, while the farther inland the more pricey and more a delicacy

Lyshae have a very tasty light meat. Most Sarvonian races, from hobbits to orcs, enjoy eating Lysh fillets. They are most commonly served fried with lashings of butter or oil, drizzled with weeproot juices and sprinkled with salt and various spices, depending on the region. For instance, the White Deer Inn of Marcogg boasts a delicious specialty called Grilled Mashdai Squillpike. However, they are also served in soups and stews, or baked whole in clay. Lysha eggs, chilled and served raw, are a delicacy that many nobles enjoy.

Silvermarshes

When the shells are pried apart, even if no pearls are to be found, the reward is a soft, pinkish meat, which can be eaten raw, smoked, or fried. It has a faintly fishy taste with an overtone of salt, ginger, and oak. Trysters, unlike their poor cousin oysters, are considered delicious, and are often served with a Brown Wine sauce by the more renowned cooks in the larger cities, but roasted directly in their shells by the fisherfolk on the beach. They can be found almost anywhere along the coast, in slightly deeper water than oysters prefer. The Avennorian people of Southern Sarvonia harvest them by diving, armed only with a prybar and a legsheath knife. Return to the top

Vegetables are the base of the Hobbit diet, meat an important nutrient, but sweets in any form is what makes an Hobbit happy, be it the daily cake, the cha‘ah time delights or candies in general.

Fruit-candies

Hobbit cooking would not be what it is without herbs and spices. These two ingredients make it so difficult to copy Hobbit receipts. Of course the skill in preparing the food carefully (so that the leches e.g. are not too soft..) is the precondition for excellent cooking, but the herbs and spices make the difference. Again a list of the most common additives is provided, but the exact amount which is used by Hobbit cooks  cannot be told.




The drinks
Beer, wine, everything
As said above already, hobbits taste everything, though they are of course very fond of beer. But no food-lover would not try to have anything else as well which might have a good taste.

Wine: Mostly cultivated and drunk at the same time by the Elenveran Hobbits, these vines are not of high quality compared with e.g. the Artivine.. but if one sits in a Hobbit Tavern at the southern base of the Rimmerins ring, this vine feels exactly right for the location and momentarily situation. Nothing fancy, it is a treat nevertheless.

The meals
The number of meals which are consumed besides the regular snacks vary from five to up to seven. (+Arts Satz)At special occasions there may be even more, but then the single meal cannot be distinguished from its vorgänger anymore and: Living and eating are used as synonyms
„That was a perfect day, we spent more time with eating than with anything else“
--depends on how much work has to be done.

Breakfast -- Porrtime
Second breakfast -- Breadtime/Breadime
Middaymeal --Meattime/Mittime/Midime
Kafe-Break -- Caketime/Kafetime  (beer in summer, kafe in winter)
Cha‘ah time
Dinner -- Vegetable time/Vegetime/Vegtime/Wegdime-Greentime
Nightmeal/supper --Cheesetime

That does not mean, that the Hobbits feel themselves confined to eat the vegetables only at dinnertime.

Last Remarks
Before this article will dive deeper in hobbit diet, a word for those who try to imitade the Hobbit cooking:
Though there are receipts - no one is followed strictly every time, but the ingredients vary from location to location and  with the availability, they may change over the time and - this may be the most important point: Every Hobbit cooks with imagination and inspiriation and often a tiny change in the choice of a herb in the last minute may be so very much important for the outcome.
Every receipt is somehow „living“ and cannot truly be copied.  The ingredients are not the same, for even if the flour for the cha‘ah time pastries is imported by the Hobbits, the water and  herbes  which are used are not and this may be the critical difference between the „same“ meat-pastry which is served to you in the Silvermarsches and the one you try to cook in your Santhalian kitchen.
This way it is so difficult to reproduce the fine hobbit delicacies in a human kitchen, even if the receipt is available.

So Talia are you abandoning this idea of a Hobbit-specific food entry?  This is very similar in purpose to the Dwarven Diet entry and i think it really brings flavour to the hobbit culture. 

The entry gives me some ideas for the overviews, but of course the overviews I am doing are not race specific so the information you have here would be good to capture in a hobbit-specific food entry. 

If this entry were to be posted i would want to list the specific dishes drinks etc (only the ones with names) in the overviews.
